Almonds Almonds Almonds Almonds!

An ex-coworker asked if I had the recipes of the almonds that I made them one Christmas on my blog. I searched and realized that they weren’t, so I decided to add these recipes in here. I don’t have the best picture for these almonds, but hopefully, can you see the photo clearly. 😛

For Winter 2008, I made some almonds as gifts for my coworkers. They LOVED them, which totally rocked my world! 🙂

Below, you’ll find 4 recipes for these almonds, the same 4 that I made for my lovely coworkers in 2008.

Garlic Parmesan Almonds (adapted from Garlic Almond recipe on Almond Board of California)
Ingredients:
4 Cups Almonds
1/4 Cup Grated Parmesan Cheese
1.5 tsp Garlic Powder
1 tsp Dried Parsley Flakes
2 Tbsp Olive Oil
Directions:
1. Preheat oven to 250F. Line a baking sheet with parchment paper.
2. Place all the ingredients in a medium sized bowl and toss until almonds are well-coated.
3. Arrange in prepared sheet in a single layer. Roast in oven until nuts begin to darken, about 20 minutes.
4. Transfer to a cold baking sheet lines with a paper towel to drain & cool.

Mocha Almonds (adapted from Cappuccino Almonds Recipe from Almond Board of California)
Ingredients:
4 Cups Almond
2/3 Cup Sugar
4 tsp Cocoa Powder
4 tsp Instant Coffee Powder
1 Egg White
2 Tbs Whipping Cream/Half & Half
Directions:
1. Combine sugar, cocoa and coffee powder; set aside.
2. Beat egg white with cream until frothy.
3. Add almonds, toss to coat.
4. Drain almonds on paper towel.
5. Toss almonds with mocha mixture.
6. Arrange almonds on a lined/greased baking sheet in a single layer.
7. Bake at 300F for 15-20 minutes, until toasted.

Cinnamon-Roasted Almonds (adapted from allrecipes.com)
Ingredients:
1 Egg White
1 tsp Cold Water
4 Cups Whole Almonds
1/2 Cup White Sugar
1/4 tsp Salt
1/2 tsp Ground Cinnamon
Directions:
1. Preheat oven to 250F. Line a baking sheet with parchment paper.
2. Beat egg white lightly, add water and beat until frothy.
3. Add nuts and toss until well-coated.
4. Mix sugar, salt and cinnamon together and toss with nuts.
5. Spread almonds onto baking sheet in a single layer.
6. Bake for 1 hour, stirring every 20 minutes, until golden.

Honey Crystal Almonds (adapted from Almond Board of California)
Ingredients:
4 Cups Almonds
1/2 Cup Honey
4 Tbsp Butter
2 Cups Raw Sugar
Directions:
1. Toast almonds in a shallow pan over medium heat for 10 minutes, until fragrant. Set almonds aside to cool.
2. Heat honey and butter in a medium saucepan over medium heat until boiling.
3. Reduce heat to medium low and simmer for 2 minutes, stirring occasionally.
4. Add almonds, simmer and stir for two more minutes.
5. Using a slotted spoon, transfer almonds onto a parchment paper lined baking sheet and spread in a single layer to cool slightly.
6. Toss almonds with raw sugar in a ziploc bag to coat.
